Vegetables for a Low Carb Diet

If you have decided to go on a low carb diet then you will be more than likely encouraged to eat certain vegetables to help with your weight loss plan.

Even though vegetables are usually seen as the ‘healthy option’ when snacking or as part of a portion controlled meal, certain vegetables are lower in carbs than others. Obviously, most vegteables are still classed as low in carbs in comparison to other foodstuffs, yet, when each carb is being counted, the wrong vegetables can make a sizeable difference in your low carb program.

Vegetables that are lower in carbs include sprouts, all of your greens (such as lettuce, spinach, chard and kale), herbs, bok choi and bamboo shoots. All of these, when prepared correctly, can make wonderful additions to main meals or enhance soups or salads.

Certain higher carb (but still healthy) vegetables include carrots, beets, peas, parsnips, potatoes and corn. These tend to be the starchier and sweeter vegetables that are available, however, if you want to lose weight fast by counting calories rather than carbs, these vegetables can help you to reach your goals too.
